apple & egg salad

Ingredients:

2 Cups Spinach / Mixed Greens

4 Oz. Egg Whites (cooked)

6 Grape Tomatoes Halved

1 Slice Jalapeno Monterey Jack Cheese

1 Slice Bacon (cooked crispy)

1/3 Avocado Chopped

1/3 Gala Apple Chopped

Drizzle of House Italian Dressing

Directions:

Mix altogether in a bowl and enjoy!

 

homemade gorp bars

Ingredients:

1 Pkg. Gorp Dry Mix - Cocoa, Hemp & Almond

1 Cup Honey

1/2 Cup Natural Peanut Butter

2 Tbsp. Maple Syrup

1/2 Cup Fruit Jam

 

 

Directions:

Pour the dry mix into a bowl.

In a small pot on the stove, stir together all remaining ingredients until it is boiling gently.

Pour mixture over the dry mixture and mix together well.

Pour into an 11"X 17" pan ~ Roll with a rolling pin.

Cool in fridge for 20 mins.

Cut into 2" x 5" pieces.

 

quick chicken

Ingredients:

Boneless, Skinless Chicken Breasts

Pinch of each Oregano, Salt, Pepper and Paprika

Olive Oil

Directions:

 

Line a baking sheet with foil or parchment paper.

Preheat oven to 400 degrees fahrenheit.

Cut chicken into strips and lay onto baking sheet.

Spread olive oil over each piece of chicken.

Sprinkle spice mixture of each chicken.

Bake for ~30 minutes or until no pink showing.

Eat as is or use as meal prep for salads.

 

slow cooker lemon chicken

Ingredients:

Whole Chicken or Boneless, Skinless Chicken Breasts

2 - 3 Cloves Garlic

1 - 2 Lemons

1/2 Cup White Wine

Salt & Pepper

Directions:

 

If using a whole chicken:

Slice the garlic and 2 of the lemons. Cube the third lemon.

Stuff the cavity of the chicken with 1 lemon and 1 clove garlic.

Insert slices of garlic under the skin of the chicken.

Place the chicken in the slow cooker.

Place the slices of the remaining lemon over the top of the chicken.

Pour wine over top of the chicken and sprinkle with salt & pepper.

If using chicken breasts:

Slice 2 cloves of garlic and 2 lemons.

Insert slices of garlic under the tops of each chicken breast.

Place the chicken in the slow cooker.

Place the lemon slices over top of the chicken.

Pour the wine over top.

Throw in the remaining garlic slices and sprinkle with salt & pepper.

Cook either method on low for approx. 8 hours or on high for 4 or 5 hours.  Cooking times may vary.

 

Vanilla nutmeg coffee

Ingredients:

2 Cups Brewed Coffee

1/4 tsp. Real Vanilla

Dash of Nutmeg

Dash of Cinnamon

 

 

Directions:

Add the vanilla, nutmeg and cinnamon to freshly brewed coffee and enjoy!

 

salsa avocado eggs

Ingredients:

6 Oz. Egg Whites

2 Tbsp. Salsa

1/3 Avocado Chopped

Salt & Pepper to taste

 

 

Directions:

Cook egg whites in microwave; slice up once done.

Throw in the chopped avocado and salsa.

Sprinkle with salt & pepper to taste.

Voila! Simple healthy breakfast.
